Hyderabadi Chicken Dum Biryani is a delicious and flavourful Indian dish that requires some effort and time but is totally worth it in the
end. Here is a recipe for making Hyderabadi Chicken Dum Biryani unlike chicken biryani:
Ingredients:
- 500g
Basmati rice
- 1 kg
Chicken, cut into pieces
- 2 cups
Yogurt
- 2
large Onions, thinly sliced
- 1 cup
Mint leaves
- 1 cup
Cilantro leaves
- 2-3
Green chillies, chopped
- 2 tbsp
Ginger-garlic paste
- 1 tsp
Turmeric powder
- 2 tsp
Red chilli powder
- 1 tbsp
Garam masala powder
- 1 tbsp
Biryani masala powder
- 2-3
Bay leaves
- 1 tbsp
Shahi jeera (Caraway seeds)
- 2-3
Cardamom pods
- 2-3
Cloves
- 1 inch
Cinnamon stick
- Salt
to taste
- 1/2
cup Ghee
- 1/2
cup Oil
- 1/2
tsp Saffron strands
- 1/4
cup Milk
Instructions:
- Rinse the rice in water a few times and soak it in water for 30 minutes.
- In a large bowl, add chicken pieces, yogurt, ginger-garlic paste, turmeric powder, red chilli powder, biryani masala powder, garam masala powder, salt, and mix well. Set aside.
- In a large pan, heat oil and fry the sliced onions until golden brown. Remove the onions from the pan and set aside.
- In the same pan, add the marinated chicken and cook for 10-15 minutes until the chicken is partially cooked. Remove the chicken from the pan and set aside.
- In a separate pan, boil water and add the soaked rice. Cook the rice until it's 70% done. Drain the water and set aside.
- Take a large pot and add the partially cooked chicken to it, followed by a layer of cooked rice. Sprinkle half of the fried onions, mint leaves, cilantro leaves, green chillies, saffron, and milk on top of the rice. Repeat the layering with the remaining chicken, rice, and ingredients. Make sure the top layer is rice.
- Cover the pot with a tight-fitting lid and seal it with dough or foil to prevent steam from escaping. Place the pot in the preheated pan and cook for 25-30 minutes.
- Remove the pot from the pan and let it rest for 10-15 minutes.
- Open the lid and mix the biryani gently. Serve hot with raita and pickle.
